3 tbsp of olive oil
1 tbsp of tomato paste
2 tsp of minced garlic
1/2 Poblano pepper, diced
1 small onion, diced
2 Roma tomatoes, diced
4 eggs
1/2 tsp caraway
1 tsp Harissa (depends on the spiciness of the harissa)
Salt and pepper
1/2 cup of water
French bread
Diced green onion (optional)
Chopped parsley (optional)
Directions
- In a medium size skillet over medium heat add oil, garlic, onion and pepper.
- Sauté the veggies until they are a little soft, then add tomatoes.
- In a small bowl, mix the tomato paste, harissa, caraway, and salt and pepper with the water and add them to the skillet.
- Bring it to a simmer and crack your eggs into the skillet. You can mix the eggs in the sauce or leave them whole – it depends on how you like them!
- Cook it until you get your desired eggs and remove from heat.
- Garnish with some parsley and green onion.
- Serve them with the French bread and enjoy!
Notes
- You can add some shrimp (no skin or tail) for a nice seafood Ojja. Just add shrimp at the beginning with the veggies.
- For additional spiciness, add more Harissa.
- Definition: Harissa is Tunisian hot chili pepper paste that is made from roasted red peppers.
