    Mocha Frappuccino

    As the summer is coming to an end, I wanted to get a Mocha Frappuccino to refresh and get some caffeine. But let’s be honest, as much as I am a big fun of Starbucks, the price of the coffee makes you think twice before buying it. So, why not make my own coffee while also having the control over the quantity of sugar and caffeine I want?

    This Mocha Frappuccino recipe was definitely a success. The flavor of both the chocolate and the coffee together was amazing. Not only that, but also this coffee doesn’t take you more than 3 minutes to make.

    Mocha Frappuccino

    Ingredients

    • 1/2 cup of cold brew coffee

    • 1/3 cup of milk

    • 1/4 cup of chocolate syrup (I used fat free Hershey’s chocolate syrup)

    • 1 cup of ice

    • Sugar (optional)

    • Toppings:
    • Whipped cream

    • chocolate syrup

    Directions

    • Add all your ingredients to a blender and blend till you get a nice smooth texture.
    • Serve your drink. Top it with some whipped cream and chocolate syrup. Enjoy.

    Notes

    • You can use half and half or any other type of milk in this coffee. I used lactose free whole milk and it worked perfectly.
    • You can use any preferable type of chocolate syrup. But, if you are adding sugar, don’t forget to take the sugar in your chocolate syrup into consideration.

  • Tunisian Pasta

    Tunisian Pasta

    One of the most common dishes to cook in Tunisia is Tunisian Pasta. If you ever visit Tunisia make sure to visit some local restaurants that can offer a great authentic pasta, especially if you go downtown where the most famous traditional Pasta restaurants are located!

    This pasta is one of the most important dishes that Tunisian mothers teach their daughters. It is a traditional dish that is made in almost every house in Tunisia.

    I first learned this recipe when I was in seventh grade. My mom had to go visit my grandparents and I stayed with my dad. One of my favorite moments during that time was when my dad came home and found his dinner ready after a long day at work. I definitely loved being thanked for the work I had done. Though one thing I have to confess about this, is that I was never the one who turned the range on, as I was scared from using the lighter so I always asked my older brother to do that for me.

    Today, I would like to share one of the recipes that I started my cooking journey with. It is one of the first and favorite recipes I learned and I hope it becomes a favorite for you too.

    Tunisian Makrouna (aka Tunisian Pasta)

    Tunisian Pasta is one of the most famous dishes in Tunisia. The Tunisian sauce for pasta is different from the others. It is mostly based on canned tomatoes and spices. This pasta is considered one of the basic dishes to learn in the Tunisian cuisine.

    Ingredients

    • 6 garlic cloves

    • 1 and 1/2 tsp ground coriander (Check notes)

    • 1 tsp of Turmeric 

    • 1/3 cup of olive oil

    • 4 tbsp tomato paste

    • 1 can tomato sauce (optional)

    • 1 teaspoon harissa (or paprika if harissa is not available)

    • 3 bay leaves

    • 1 lb of Chicken Thighs or drumsticks (Check notes)

    • 4 tbsps of chickpeas (optional)

    • 4 tbsp of sweet peas (optional)

    • 3 cups of hot water

    • 1 Pound of pasta of your choice

    Directions

    • In a small food processor add the garlic, coriander, salt, and tomato paste, and then grind them together. (This will allow the spices and the garlic to release the flavor in the tomato paste).
    • In a large pot in medium heat, add the olive oil, wait for a minute or two for the oil to heat a little bit but not too much. Then, add the garlic and spices mix. Mix it well then add the chickpeas, peas, chicken, and bay leaves. Mix it well for about 3 minutes so that the chicken gets marinated and the tomato paste looses its sourness. 
    • Add the tomato sauce and one cup of hot water. Let the sauce heat for about 4 minutes and then add the rest of the water. 
    • Cook for about 40 minutes or till the chicken is cooked and the sauce has thickened a bit.
    • Cook the pasta according to package instructions, then add as much sauce as you desire. Mix it well. Then, add the rest of the sauce and top it with the chicken and some chickpeas and peas. 

    Notes

    • If you have Tunisian Bzar (a Tunisian spice) you can use that instead of the ground coriander.
    • You can replace chicken with any other type of meat desired (ex: shrimp, beef, meatballs, …). If shrimp was used, you need about 1 bag of small shrimp shell and tail removed.
    • If you don’t have a small food processor, you can mince the garlic and then mix it with the rest of the ingredients.
    • When mixing the pasta and the sauce, remember to remove the bay leaves.
    • For a prettier and more delicious pasta you can add some fries and fried peppers on top.

    In Tunisia one of the most commonly used types of Pasta is the Ditalini pasta known there as “Fell”. As you can see in the picture above, Ditalini does work really well with this kind of sauce. The holes inside it gives a way for the peas and chickpeas to hide which makes it like a surprise while eating. Shells work wonderfully with this too, especially the large ones.

    If you want to include this Macaroni in a family meal, you can add some side dishes such as salads, soups, and sautéed vegetables.

    Ingredients

    • 3 tbsp of olive oil

    • 1 tbsp of tomato paste

    • 2 tsp of minced garlic

    • 1/2 Poblano pepper, diced

    • 1 small onion, diced

    • 2 Roma tomatoes, diced

    • 4 eggs

    • 1/2 tsp caraway

    • 1 tsp Harissa (depends on the spiciness of the harissa)

    • Salt and pepper

    • 1/2 cup of water

    • French bread

    • Diced green onion (optional)

    • Chopped parsley (optional)

    Directions

    • In a medium size skillet over medium heat add oil, garlic, onion and pepper.
    • Sauté the veggies until they are a little soft, then add tomatoes.
    • In a small bowl, mix the tomato paste, harissa, caraway, and salt and pepper with the water and add them to the skillet.
    • Bring it to a simmer and crack your eggs into the skillet. You can  mix the eggs in the sauce or leave them whole – it depends on how you like them!
    • Cook it until you get your desired eggs and remove from heat.
    • Garnish with some parsley and green onion.
    • Serve them with the French bread and enjoy!

    Notes

    • You can add some shrimp (no skin or tail) for a nice seafood Ojja. Just add shrimp at the beginning with the veggies.
    • For additional spiciness, add more Harissa.
    • Definition: Harissa is Tunisian hot chili pepper paste that is made from roasted red peppers.

  • Grilled Shrimp Skewers

    Grilled Shrimp Skewers

    Are you looking for dinner ideas or maybe for some savory dishes for a party. These Grilled shrimp skewers are your solution. Serve them with a salad or some rice for a nice dinner or by themselves for a party. These skewers are your way to go.

    Ingredients:

    Instructions:

    1. In a small bow mix the olive oil, cilantro, salt and paprika.
    2. Cut the onion and pepper into large dices.
    3. In a large bowl mix the shrimp, the pepper, and onion with the oil cilantro dressing.
    4. Skewer onion, pepper, and shrimp in desired order. 
    5. Preheat grill to medium high heat.
    6. Grill the skewers for about 15 minutes on each side. The shrimp should reach at least 165 degrees Fahrenheit.
    7. Serve your grilled shrimp skewers with lemon wedges and a salad.
    8. Enjoy

    Note: You can use ez-peel shrimp instead. I just don’t like to peel the shrimp when eating.

    When I first started making pancakes, I used to always use the pancakes mixes sold in all stores but then I found out how unhealthy they are and started not only make my own but I also made them with almond flour. So, maybe you are like me and you just want to provide a healthy diet for your family. Or you can be just looking for an easy breakfast recipe. Well! whatever you are looking for, I highly recommend these delicious pancakes for a nice, healthy, and easy breakfast to enjoy with your family.

    Almond Flour Pancakes

    Ingredients

    • 2 cups almond flour

    • 2 tsp baking powder

    • 3 eggs

    • 1/3 cup and 1 tbsp of almond milk

    • 2 tbsp olive oil

    • Pinch of salt

    • Optional: Maple Syrup

    • Optional: Berries or any fruits of choice

    Directions

    • In a large bowl, add flour, baking powder, and salt and mix them well.
    • Add the eggs, oil, and milk then mix it well and let it sit for a bit.
    • Heat a skillet over medium heat, then grease it with a little bit of olive oil.
    • Pour 1/2 cup of batter over the pan spreading it a little bit for a nice shape
    • Cook it on both sides till slightly brown.
    • Top it with some maple syrup and some fruits and enjoy your Almond Flour Pancakes.

    Notes

    • Before flipping you should see the upper side of the pancake mostly dry. If the pancake gets burn before it’s cooked, you might want to lower the heat.

  • Grilled Chicken with Oven Baked Veggies

    Grilled Chicken with Oven Baked Veggies

    Are you out of dinner ideas and thinking what you should cook for your family. Don’t worry I got you. This Grilled Chicken with Baked Veggies is a nice healthy dinner if you are looking for something healthy but delicious. This recipe is so easy and fast to make. You don’t have to stick with the veggies I used. You can use whatever you have.

    Ingredients

    Instructions

    1. Preheat the oven on 350F
    2. In a bowl mix the chicken with the seasoning, oregano, and basil.
    3. In a bowl mix the veggies with some seasoning, oregano, and basil. Add some olive oil (don’t add too much, you want it to just coat the veggies).
    4. Put them in the oven till the potatoes are cooked.
    5. Meanwhile, in a medium skillet grill the chicken breast fillet till the temperature get to at least 165F.
    6. Serve and Enjoy.

  • Tomato Basil Chicken

    Tomato Basil Chicken

    If you are looking for some easy dinner recipes, this Tomato Basil Chicken is a must do. Topped with some basil and a side of veggies, this chicken recipe is amazing.

    Ingredients

    • 4 chicken breast fillet
    • 4 tomatoes cut into quarters
    • 2 thinly sliced bell peppers ( I used yellow and red)
    • 1 thinly sliced yellow onion
    • 1tbsp of minced garlic
    • 2 tbsp olive oil
    • salt
    • pepper
    • 1/2 tsp garlic powder
    • 1 tbsp dried oregano
    • 1 tbsp fried basil
    • 1/4 cup of fresh shredded basil

    Instructions

    1. In a bowl add your chicken, dried oregano, dried basil, garlic powder, salt, and pepper. Mix them well so that the chicken gets evenly marinated.
    2. In a large pan over medium heat, add oil, garlic, spread them in the pan and then add your chicken to the pan ( if any spices left in the bowl, add them too) and cook it till it’s slightly browned.
    3. Transfer your chickens to a plate and add your onion and pepper to the pan. Mix them well in the chicken spices left in the pan ( you can a little bit more salt and pepper if you like your veggies more flavorful).
    4. Add your tomatoes and mix them well with the other veggies and cook them for 2 minutes.
    5. Add your chicken back into the pan and cover it with your veggies. Top it with the basil and remove from heat.
    6. Enjoy by itself or with some rice.
  • Lemon Cake

    Lemon Cake

    Ingredients:
    1 and 1/2 cup flour
    1 cup sugar
    1/2 cup milk
    The juice of 2 lemons
    3 eggs
    1 stick of butter melted (110 g or 40 oz)
    1 tsp lemon zest
    1 and 1/2 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp vanilla extract
    A pinch of salt

    Icing:
    The juice of 1 lemon
    Powdered sugar

    Recipe:
    Preheat oven to 350 Fahrenheit or 180 Celsius.
    Grease your Bundt or normal pan ( I used a Bundt pan)
    Add your eggs and sugar to a large bowl and mix them well till the sugar is completely melted ( hand mixer or stand mixer with paddle attachment).
    Add the butter, the vanilla extract, the lemon juice, and the lemon zest and mix well.
    In another medium bowl mix the flour, the baking powder, baking soda, and the pinch of salt.
    Add the flour mix to the egg mix and mix them together.
    Add the milk and mix it.
    Transfer the batter to the greased pan and bake till the cake is slightly gold.

    In a small ball put the juice of one lemon. Add powdered sugar to it while mixing till you get a white paste. Then add the icing to the cake and enjoy.

  • Hot Chocolate for Two

    Hot Chocolate for Two

    Ingredients:

    • 1 cup of semi sweet chocolate chips
    • 2 cups of milk
    • 1 tbsp of cocoa
    • Marshmallows (optional)

    Instructions:

    1. In a saucepan put the chocolate chips and 1 cup of milk and place in the stovetop on medium heat. Keep stirring till the chocolate is all melted.
    2. Add 2/3 cup of the remaining milk to the chocolate and warm the other third in the microwave and mix it with the cocoa.
    3. Add the cocoa mix to the chocolate mix and wait till it boil then remove from heat.
    4. Note: If the cocoa didn’t mix well. Strain the hot chocolate before serving for a better texture.
  • Honey Garlic Salmon with Rice and Veggies

    Honey Garlic Salmon with Rice and Veggies

    Recipe: (for 3)

    • 3 pieces of salmon fillets
    • 3 tbsp olive oil
    • 2 tsp of garlic minced
    • 1/2 cup water
    • 1/3 cup soy sauce
    • 3 tbsp honey
    • Parsley
    • Lemon wedges 🍋
    • Avocado wedges
    • 1 chopped green Bell pepper
    • 1 chopped orange or yellow bell pepper
    • About 8 mushrooms ( cut into slices)
    • 1 tbsp cornstarch
    • 2 cups cooked rice 🍚
    • Salt and pepper 🧂

    INSTRUCTIONS

    1. In a large pan over medium high heat put some olive oil. Add the salmon then season it with salt and pepper. Cook for about 6 minutes per side (till it’s just cooked through)
    2. Remove the salmon from the pan. Add the garlic to the pan. Then add the veggies ( mushrooms and peppers).
    3. In a small bowl, mix the cornstarch with a little bit of cold water. Add the water, soy sauce and honey to the pan; bring to a simmer. Then add the cornstarch mix.
    4. Whisk to combine. Then let it boil for a bit.
    5. Return the salmon to the pan for 2 min. Remove from heat and cover the pan.
    6. Serve the rice in a plate then top it with the salmon and some of the sauce.
    7. Sprinkle with parsley, spring onion and sesame seeds. Serve with lemon wedges and avocado slices.
